Green Ambitions at IPC

Ready, set, GO – a sustainable food journey has begun…

At IPC, we teach our students about sustainability and social responsibility in relation to the planet’s resources, but we also need to walk the talk! Food, in particular, is an area where we as an international community can make a positive difference in relation to the planet’s resources, by ensuring that our global values and ambitions related to sustainability are integrated, operationalised and reflected in our local kitchen practices.

Therefore, IPC will in 2025 “put our money where our mouth is” and implement a series of concrete measures and policies in relation to sustainable purchasing of food, reduction of food waste, prioritisation of ecology and development of plant-based food strategies.

Our green ambitions:

✅ Serving tasty, sustainable and more plant-based whole food
✅ Achieving and maintaining a Silver Organic Cuisine Label*
✅ Creating a stronger linkage between the food we serve and our educational activities
✅ Sharing knowledge with our partners and local community
✅ Reduction of food waste

* The Silver Organic Cuisine Label indicates that 60-90% of the ingredients used in the kitchen are organic.

A committed Kitchen Team

Ambitions mean little without passionate people to bring them to life – and at IPC, we’re fortunate to have an incredible kitchen team dedicated to making a difference.

Our kitchen team has already taken significant steps to create a greener kitchen while actively involving students in the process. For example taking students into the forest to collect mushrooms, teaching them how to prepare and cook these local treasures, or facilitating students to plan, prepare, and serve traditional Ukrainian dishes for a big international event at campus, creating a meaningful connection between culture and sustainability. In addition, the kitchen team at IPC strives to educate students about food waste and sustainable practices throughout their term. Through hands-on activities, workshops, and daily kitchen routines, students learn how to minimize waste, make conscious food choices, and adopt environmentally friendly habits that they can carry forward in their lives. The goal is to inspire responsibility and mindfulness when it comes to food consumption and its impact on the planet.We plan to develop the kitchen at IPC into a hub for learning, collaboration, and innovation in sustainability.
